PRAWN TACOS

Great served fresh for dinner.

Ingredients

  • Fresh wild-caught prawns (could use other sources of protein)

  • La Tortilleria or Dona Cholita Corn Tortillas

  • Paprika

  • Olive oil

  • Avocado

  • Red onion

  • Lime

  • Coriander

  • Cabbage

  • Pineapple

  • Fresh chilli

  • Cheese of choice (optional)

  • Sour cream (optional)

Directions

  1. Grill prawns (stove or BBQ) in paprika and olive oil.

  2. Make guacamole mixture (smash avo, fresh lime, diced red onion, salt).

  3. Grill diced pineapple on BBQ or stove.

  4. Cook the tortillas on the stove (one at a time).

  5. Serve each tortillas with shredded cabbage, grilled pineapple, prawns and guacamole mixture.

  6. Top with grated cheese + sour cream (optional).

  7. Serve with fresh lime and coriander.
