CHICKEN CURRY

Great served fresh for dinner + lunch leftovers the next day.

Cooking Time: 25 minutes


Ingredients

  • Chicken breast or choice of protein (lamb, duck, pork, fish).

  • Curry powder (spicy or mild)

  • Coconut milk or cream (400ml)

  • Fresh chilli

  • Ginger

  • Garlic

  • Onion

  • Coconut oil

  • Choice of vegies (pumpkin, potato, brocolli, green beans)

  • Organic basmati rice or black wild rice

  • Lime

Directions

  1. Steam rice on stove or in rice/pressure cooker.

  2. Chop chicken/protein into pieces and brown off on the stove.

  3. Chop vegies (and garlic, onion, ginger + chilli) and add to chicken/protein in saucepan/pot.

  4. Add can of coconut cream and 2 tbsp of curry powder.

  5. Let it cook on the stove for approximately 20 minutes (slightly covered).

  6. Serve with rice, fresh lime and coriander.
