CHICKEN STIRFRY

Great served fresh for dinner + lunch leftovers the next day.

Ingredients

  • Chicken or choice of protein (pork, fish)

  • Tamari

  • Honey

  • Ginger

  • Garlic

  • Onion

  • Fresh chilli

  • Sesame seeds

  • Lime

  • Coriander

  • Coconut oil

  • Vegies (capsicium, zucchini, carrot, broccolini/broccoli)

  • Organic basmati or wild black rice

Directions

  1. . Steam rice on stove or in rice/pressure cooker.

  2. Chop chicken into pieces and marinate in tamari, honey and fresh ginger.

  3. Chop vegies (and chilli).

  4. Cook chicken pieces on the stove (until almost fully cooked) and then remove.

  5. Sautee vegies in coconut oil and remaining juices from chicken.

  6. Add chicken back into the frying pan and add more tamari and honey. Stir through.

  7. Serve with rice and top with sesame seeds, fresh lime and coriander.
