SALMON POKE BOWL

Great served fresh for lunch or dinner.

Ingredients

  • Wild-caught salmon fillet

  • Organic basmati or black or red wild rice

  • Cucumber

  • Carrot

  • Sesame Seeds

  • Tamari

  • Honey

    Ginger

    Cabbage

    Radish

    Lime

    Avocado

    Sour cream (optional)

Directions

  1. Steam ½ cup of rice on stove or in rice/pressure cooker.

  2. Marinate salmon fillet in 1 tsp honey, 1 tbsp tamari and freshly grate ginger through marinade.

  3. Grill or bake the fillet for 10-12 minutes.

  4. Grate carrot slice and cut cucumber into rounds and marinate them in tamari and sesame seeds.

  5. Line a bowl with shredded cabbage and sliced radish.

  6. Serve up the steamed rice, ⅓ of avocado, cucumber, carrot, and salmon fillet.

  7. Finish with sesame seeds and fresh lime.

  8. Top with sour cream if you wish.
